When Camp Casey temporarily closed its doors in March due to COVID-19, the camp’s new food vendor’s zestful outlook kept her rolling dough with the punches. 

“When your business is dependent on large gatherings and suddenly they’re no longer allowed, you must adapt quickly and keep a positive attitude,” said Jackie Huerta, chef and owner of Zanini’s Catering.

Thus, “Sunday Dinners by Zanini’s Catering”was born on Whidbey Island.

“We’ve created full dinners every Sunday for customers to pick up and share with their loved ones,” said Huerta. “The meals are fully cooked. Just follow reheating instructions and enjoy a family dinner from Auntie Jackie.”

Among the entrée choices are chicken marsala (chicken breasts baked with creamy marsala sauce, smothered in mushrooms) or stuffed manicotti (pasta tubes filled with fresh spinach and mozzarella and ricotta cheeses, baked in marinara). Camp Casey is reopening low occupancy lodging on August 1. When the time is right, they will welcome larger groups back and Mess Hall A will be open for business. The opened dining space will follow CDC guidelines, adhere to best practices like wearing masks and gloves, and social distancing in the kitchen and mess halls. What other changes might guests expect from their food service experience?  

“We’re getting creative and may offer some prepared meals in individual containers. Also, outdoor meals or to-go meals are possibilities,” she said. “I just can’t wait to fill that kitchen with the wonderful aroma of fabulous food.”
